I had a baking day today. It was Mother’s Day, so I decided to make mum a yummy cake and some cupcakes. I made 6 plain cupcakes and 6 chocolate cupcakes. Both have Lemon Butter Icing (my favourite icing flavour in the world is lemon).
Here’s the recipe:
Cook for 15 mins at 180 degrees celsius.
Sift 1 1/3 cups self raising flour
2/3 cup unsalted butter or margarine
3/4 cup castor sugar
Mix the ingredients altogether and put into cupcake papers.
I always put the cupcake papers into a muffin tray so they stay upright.
They are done when they are golden brown.
