Yummy American style pancakes from the Nigella Lawson ‘How to Be a Domestic Goddess’ book.
I love pancakes, but we do not make them often. We only make them on special occasions. If you look at my Easter post from yesterday, you’ll see them in the picture.
These pancakes are soft and go well with bacon, banana, maple syrup and cream!
Here is the recipe:
225g plain flour
1 tbsp baking powder
pinch of salt
1 tsp sugar
2 large eggs, beaten
30g melted butter (which has been cooled)
butter for frying.
My mum and I always put the mixture into the blender so that all flour lumps can come out.
We let the batter sit for about 20 mins and then when it is ready we pour the batter into a jug so that it is easier to put onto the frying pan. We put butter on the frying pan before each pancake goes on.
We get at most 6 big size pancakes and about 5 smaller pancakes.
They are really scrumptious.
